Dry Diggings Distillery

Dry Diggings Distillery is a family-owned craft distillery in El Dorado Hills, an easy roughly 30-minute drive from Auburn that makes a good day trip. Distilling on site since 2012, with tastings since 2015, the team produces whiskey, brandy, vodka, and gin, and guests can dig into educational spirit flights and distillery tours that walk through fermentation, blending, and distilling. In late 2025 the operation expanded with a full cocktail bar and a dining room called The Hills, serving classic and seasonal cocktails alongside a simple, seasonally driven, Gold Rush-inspired menu plus local wines and beers. The modern industrial building sits against the El Dorado Hills foothills. It's a 21-and-over establishment, and reservations are recommended though walk-ins are welcome when there's room.
